Crockpot Beef & Broccoli

Ingredients:

  • 1/4 cup low sodium chicken or beef stock
  • 1/4 cup low sodium soy sauce
  • 1/4 cup coconut aminos
  • 2 tablespoons honey
  • 1 tablespoon rice wine vinegar
  • 1/4 teaspoon sesame oil
  • 1 tablespoon finely chopped garlic
  • 1/2 teaspoon freshly grated ginger
  • 1/8 teaspoon red pepper flake
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 2 tablespoons cornstarch or arrow root powder 1 tablespoon olive oil
  • 1 1/2 lb thinly sliced beef shoulder or flank steak 1 1/2 lb broccoli

Directions:

  1. Add all ingredients EXCEPT beef and broccoli to a large bowl. Once thoroughly mixed, add thinly sliced beef.  Toss to coat.
  2. Add contents to a crockpot and cook on high for 3-4 hours.
  3. Stir in broccoli and let cook an additional 10-15 minutes until softened. Serve over rice and garnish with toasted sesame seeds.
